The amuse should be seasonal, appropriate to produce for 300 guests, elegant and delicious. The item must also represent the pride associated with the California Culinary Academy’s Thirty Years of Excellence. Accompanying the recipe will be a 500 word essay on how the amuse bouche will represent our school’s proud thirty year tradition. Student entrants must have a GPA of 2.0 or better to qualify; all essays must be submitted to Student Services, South Campus room #304, by October 5th. Entrants will be winnowed down to 20 choices based on the essays. The top twenty essays will be ranked by their respective recipes; the top five choices will move onto the finals. Once the finalists are determined, they will be invited to an ultimate showdown on October 20th, where each will produce 10 identical servings of their dish. The amuse bouche will be judged on flavor, presentation, seasonality, and expression of the theme. The judging panel will consist of CCA staff, CCAEF Board Members, and Celebrity judges. The winner of this final evaluation will be the recipient of the $10,000 Guckenheimer Scholarship for 2007; this money will be credited to the student’s account in one lump sum during the next payment period. The winner’s recipe will also be used for our CCAEF Gala dinner, and the student submitting the winning recipe will be a guest of honor at the CCAEF Gala.
